North Carolina - Usually a vinegar based sauce. It tends to be thinner with a very tangy flavor.
Kansas City - Tomato based sauce. Usually has a slightly sweet and smoky flavor with a heavy tomato flavor.
South Carolina - Mustard based. It is similar to North Carolina except it contains less vinegar and more mustard.
Memphis - Similar to Kansas City style but it tends to contain more brown sugar and vinegar, which can thin it out slightly. Memphis flavor is not as smoky as KC style.
Texas - These sauces are mainly used for beef. They usually have a little kick to them. Sometimes they combine sweet with spicy.
